15 Minute Vegan Recipe/ Zesty Quinoa and Avocado Salad

There are various quick and easy vegan and alkaline friendly meals. When you don't have the desire to cook a full meal these 15 minute or less meals are super convenient. I also find that if I choose one day out of the week preferably early in the week Monday or Tuesday to chop the veggies that I incorporate into my diet daily. It cuts out the prep time and makes cooking and even my 15 minute meals much faster. We all know how time consuming chopping our veggies and fruits can be.

I've learned to appreciate staying creative and fluent with my meals to create the most flavorful and healthy dishes. Try this dish for yourself here's the recipe:

Ingredients: quinoa, dived cucumbers, zucchini, roma tomatoes, red and orange bell peppers, red and white onions, black pepper, salt, lemon, turmeric, cilantro, avocado, garlic.

Steps: 1) Bring water to a boil. Add quinoa, and boil for 15 minutes

2) While the quinoa is cooking, using separate bowls chop your veggies: cucumbers, tomatoes, red and white onions, red and orange peppers, and zucchini.

3) Rise and strain quinoa (texture should be fluffy but not completely dry).

4) Mix veggies with quinoa.

5) Add lemon to the mix as you stir.

6) Add seasoning mix (salt, pepper, turmeric, diced garlic).

7) Mix all ingredients well, and garnish with house made avocado lemon herb dressing or your choice of dressing. I recommend a dressing that is zesty!
